Sambal matah is originated in Bali. Many people do not know about or hear of Indonesia, but they sure know Bali 🙂 sambal matah is made with all raw ingredients. Sambal is a very “loose” term here. There are so many different kinds of sambal and usually, chilis are involved when it comes to sambal.
Okay, so here's the recipe :)
- kaffir lime leaf 5 leaves (5 lembar ukuran sedang daun jeruk purut iris halus & buang tulangnya)
- chilli 10-20 (gue pake 15 cabai rawit/lombok/cengek)
- onion 25 pcs (25 bawang merah)
- garlic 2 cloves (2 siung bawang putih)
- fermented shrimp paste 7gr (terasi udang 7gr/1sdt penuh)
- lemongrass 5pcs (4 batang sereh/batangan kecil)
- mushroom broth 1,5tsp (1,5 sdt kaldu jamur kaldu ayam/micin)
- coconut oil 50ml (minyak kelapa 50 ml, NO SKIP yah biar wangi)
- salt 1/2 tsp (garam 1/2 sdt/secukupnya cek rasa aja!)
- granulated sugar 1,5 tsp (gula pasir 1,5 sdt/secukupnya cek rasa aja!)
- lime 2 medium size (2 jeruk nipis ukuran sedang)
